  2. Add oil and butter to a skillet. Add onion and cook on low heat until soft, about 2 minutes. Add garlic and mix for 30 seconds.
  3. Add bread crumbs to skillet and mix. Off heat add lemon juice, chicken broth, and parsley.
  4. Place shrimp in a shallow oven safe pan with tails up. Make a meatball size ball of the stuffing and place on each shrimp pushing down to cover the shrimp body. Pour in chicken broth so there is a slight liquid level. If you want extra stuffing you can make it and place it in the middle of the pan. Place shrimp in a 350°F oven. Cook for 8-10 minutes. Shrimp should be opaque at 110 to 120°F.
  5. Plate the shrimp, serve and enjoy. As I mentioned in the description it pairs great with a fillet mignon.
